HEALTH & WELLNESS FUN FOR FAMILIES: Kid-Created and Healthy Lunchtime Recipes!

TheEpicuriousHealthyLunchtimeChallengeCookbook2013-1.jpgLooking for a new lunch idea? Try one of the 54 winning recipes from the second annual Healthy Lunchtime Challenge, sponsored by Epicurious magazine with help from First Lady Michelle Obama, the Department of Education, and the Department of Agriculture.

The challenge? Create an original lunchtime recipe that is healthy, affordable, delicious, and follows the nutritional guidelines of MyPlate.

More than 1300 recipes created by children aged 8 to 12 were submitted. Judges selected one winner from each state, plus the U.S. Territories; Washington, D.C.; and Puerto Rico. The winners and a parent or guardian were invited to a Kids' "State Dinner" at the White House, hosted by Mrs. Obama--and serving some of the winning dishes.

The winning recipes, including an introduction by each winner on what inspired the recipe, can be downloaded free as a pdf booklet. Choose from such tempting, tasty, and terrific recipes as: Kickin' Colorful Bell Peppers Stuffed with Quinoa, Picky Eater Pita Pizza Pockets, Black Bean Wrap with Jicama Grilled Corn Salsa.

One of the best ways to get kids to eat healthier meals is by involving them in the selection and creation of new recipe ideas. What are your family's kid-favorite meals?
